Why Sardines Should Be at the Top of Your Grocery List

The truth about sardines is that they are probably one of the healthiest finfish you can eat from the sea. They are hardly ever farm-raised, which means that they swim and eat as they please and are rich in vitamin D3, your Omega-3′s and purines. Large apex predators like tuna and swordfish and salmon are known to accumulate excessive levels of heavy metals, while sardines may contain up to 8 million times less mercury than even salmon.

 

Do you ever wonder why it is that, especially in the United States, many people avoid eating sardines? Aside from the fact that they are usually associated with a tin can on a grocery shelf, sardines, or pilchards, are quite oily and bony. The sardine is, however, a very healthy option. Sardines feed on photosynthetic plankton, so as lighter consumers, they acquire very minuscule concentrations of heavy metals than most larger, more commercially sought predators do. Because of their diet, sardines are rich in omega-3 oils, protein, good cholesterol, selenium, and calcium and fluoride if you eat the soft bones.

Often sold at around $2.00 USD a pound, they are certainly cheap enough for most of us, too.

There are about 21 different species of sardines, all belonging to the Clupeidae family, but they can all be prepared the same way. The best way to have sardines is fresh, of course, and this will thoroughly reduce the “fishy” smell left behind. If your fish aren’t scaled, do so carefully with a knife, removing the entrails afterwards. As with most fish, the best marinade is simply olive oil, lemon and parsley. If you toss them on the grill afterwards, you’ll add a nice charred flavor to the fish, while also keeping the smell out of the house.

Grilled Sardines with Lemon and Olive Oil

Note – California’s sardine fishery reopens September 15.

Uuber-easy is the name of the game with this classic Mediterranean recipe.

Grilled sardines are a completely different beast than the oil-packed, canned ones, and they come to life with just a bit of lemon juice and olive oil. We used our robust Italian Blend Olive Oil, since its spice and aroma hold up well to the grill, and finished off with only citrus and seasonings, this summer dinner is done in under 10. Serve it up with a side of olive tapenade, garlic bread, and cheeses for a lovely platter.

Ingredients

  • 8 medium sardines, cleaned, head and tail intact
  • 2 tablespoons Italian Blend Olive Oil, plus more for serving
  • Sea salt and black pepper, to taste
  • 16 rounds thinly sliced lemon
  • 4 lemons, halved, for serving
  • Black olives, for serving

Here’s how to finesse those fishy sardines

Northern California’s sardine season opened July 1, but not all of us have spent the last week flocking to our local fishmonger to buy sardines by the pound.

Why not?

Most people would say it’s because sardines taste, well, fishy.

But there are plenty of ways to temper that strong flavor. And there are plenty of reasons to eat them: They’re local, sustainable and oh-so-good for you.

Pacific sardines sit toward the bottom of the food chain, are low in mercury levels, reproduce prolifically and are called a “best choice” by the Monterey Bay Aquarium’s Seafood Watch.

They are a good source of vitamins A and D and are particularly rich in omega-3 fatty acids, consumption of which has been shown to have numerous health benefits, including reducing cardiovascular and neurological diseases.

Sardines ready for the grill

If your experience with sardines is limited to what you get from a can, then you are in for a special treat with Portuguese sardines.

Good, grilled sardines are a shock for most people who have only had them canned. Even Oprah includes sardines as one of the 25 superfoods to include in your diet. According to her, “Wild-caught sardines are low in mercury and high in vitamin D; a 3-ounce serving has as much calcium as a cup of milk. Even better, they’re one of the Monterey Bay Aquarium’s top picks for sustainability.”

Executive Chef Billy Brandolini of Ceia Kitchen & Bar in Newburyport shows us his way of brining and grilling sardines a la Portuguese style. Grilled sardines are also eaten all over Southern Europe along the Mediterranean coast. In Portugal, sardines are very popular, especially in the summer at outdoor celebrations and festivals, when the sardines are fattest. To the Portuguese, the little fish are like hot dogs and hamburgers, available from outdoor vendors and served at private food gatherings.

Anchovy, sardine populations not at risk

The Santa Cruz Sentinel recently ran a column by D.B. Pleschner, executive director of the California Wetfish Producers Association.  It’s reproduced in its entirety below:

“In Monterey Bay, and around the world, little fish are in big trouble,” wrote Sascha Zubryd in her May 13 Sentinel article.

The article reported on a new study by Stanford researchers, who expressed surprise that small coastal pelagic fish, such as sardine and anchovy, were as subject to collapse as large predator fish.

But this isn’t news to scientists well-versed in the cycles of these coastal pelagic species. In fact, the first academic research paper that said essentially the same thing appeared in the 1880s, more than 100 years ago.

What’s more, in California, these species are not in trouble.

When asked about the Stanford study, Dr. Richard Parrish, a former member of the West Coast Coastal Pelagic Species Management Team and recently retired from the National Marine Fisheries Service, said, “I am always amazed when academic scientists publish papers on fisheries and are surprised by things that were well-known and published decades ago in fisheries journals.

“The brief answer is yes, small fishes can be and often are overfished,” he added. “The problem is confounded with environmental fluctuations that occur with a periodicity which suggests that you can believe what your grandfather tells you, but you cannot believe what your father tells you.”

Sardines are a classic example.

The storied Pacific sardine collapse in the 1940s was widely blamed on overfishing, but decades later scientific studies of core samples taken from the deep anaerobic trench in the ocean off Southern California revealed layers of sardine scales and layers of anchovy scales corresponding with oceanic cycles. Warm-water cycles favored sardines and cold-water cycles favored anchovies. The bottom line: the sardine population would have declined even without fishing pressure.

Such findings led Dr. Parrish and other members of the management team to design a new, ultra precautionary harvest strategy for sardines when the population was declared fully recovered in 1999.

And the same precautionary principles apply to other coastal pelagic stocks as well, in light of their known cycles of abundance and importance in the ecosystem as forage for other marine life.

Today’s fishery management of coastal pelagic species in California and along the West Coast portion of the California Current Ecosystem is acknowledged as the most precautionary in the world, one of only a few areas deemed to be “sustainable” by internationally recognized scientists Rebuilding Global Fisheries, Science 2009.

The basic management strategy adopted a decade ago for coastal pelagic species harvested in California and on the West Coast maintains at least 75 percent of the fish in the ocean to ensure a resilient core biomass. And the protection rate for sardines is even higher — about 90 percent.

In addition, the state of California is implementing a network of no-take marine reserves throughout state waters. Reserves established at specific bird rookery and marine mammal haul-out sites, for example near Año Nuevo, the Farallon Islands, and the Channel Islands in Southern California, are explicitly intended to protect species such as anchovy, sardines and market squid as forage for other marine life.

Recently, concern over increased utilization of small fishes worldwide has grown in response to a perceived increase in demand for fishmeal for an expanding aquaculture industry.

But again, this risk does not apply to California, as reduction fisheries and fishmeal plants no longer exist in the Golden State.

In Monterey and California overall, people can rest assured that the little fish are not in trouble here; rather these coastal pelagic species are harvested sustainably, and they still contribute enormous benefits to the socio-economic and cultural well-being of our harbor communities.

Why This Lowly Little Fish Should Be at the Top of Your Shopping List

Wild seafood is wrought with environmental, ethical, economic, and health implications. But the sardine poses a solution to each of these problems.

A seafood meal is the one opportunity most Americans will ever have to eat a wild animal. Given the illegality of selling wild game, only hunters and their lucky friends get to munch the many tasty beasts that roam the boondocks. Eating a wild thing is like walking around on your bare feet. It’s exposure to an ecosystem, and a direct connection with the planet. Eating wild fish is like a swim in the ocean, except in this case the ocean swims inside of you.

Unfortunately, wild seafood is wrought with environmental, ethical, economic, and health implications. Many fish stocks are dwindling. And prices, not surprisingly, are climbing. Certain fishing methods are damaging underwater ecosystems and creating bycatch, whereby the wrong fish are caught, and all too often killed. Big carnivorous fish like tuna and swordfish are known to accumulate dangerous levels of heavy metals from the many fish, great and small, in their diets.

Thousands of dead fish scooped from Ventura Harbor

Officials were trying to determine Tuesday what caused thousands of sardines to turn up dead in Ventura Harbor, another puzzling case of fish that died off after apparently using up all their oxygen. 

Harbor master Scott Miller said he arrived Monday morning to find patches of dead sardines floating on the surface of the southwest corner of the harbor.

Other fish bobbed near the surface, appearing to gasp for air.

After deploying aerators to stir up oxygen below the surface, a dozen volunteers used nets to scoop about 6 tons of fish carcasses from the water before dumping them offshore, he said.

How to Make Sardines in Olive Oil

eHow contributer Chelsea Hoffman recently posted steps to make sardines in olive oil.

1) Add the sardines to the canning jar. A full cup of sardines is close to 1/4 of a lb. Purchase your sardines fresh from a reliable source, making sure they’ve been properly cleaned before canning them.

2) Pour the olive oil into you canning jar. Add the carrots, onion, garlic and optional crushed red pepper to the jar. The crushed red pepper will give the sardines a spicy bite.

3) Secure the lid on the canning jar and shake the solution for a few seconds to mix the ingredients together.

4) Put the stockpot, half full of water, on the stove and bring it to a rolling boil. Place the jar into the pot. Let the water boil over the jar for 30 minutes. Not only does this cook the ingredients, but the hot water will seal the jar, making it airtight. This is known as a “hot water bath,” when canning foods.

5) Turn off the stove and remove the hot jar from the water, using the canning tongs. Sit the can on your counter and allow it to cool to room temperature. This takes up to eight hours, or sometimes more, depending on the temperature of the environment.

5 Steps to Better Choose Sardines

Recently James Stuart, a contributor to eHow, posted five steps to picking out sardines. Here are the highlights:

1) Consider where the sardines were caught. Check the label and see if the country is listed. If not, check the company’s website. Knowing where the fish was caught can tell you about the practices that were used to capture it. Check fishing laws to see if that country uses methods you’re comfortable with. It can also help you identify what kind of sardine you like, as regional differences affect the taste of the fish.

2) Check the brand. Different brands may use different fishing methods, and will likely have a reputation. You can check websites such as EcoFirms.org that will tell you which brands are sustainable.

3) Look at the price. If your main concern is money, go for the cheapest brand. Ensure that the cheapest brand uses fishing methods and packaging that you’re comfortable buying.

4) Look at the packaging. Check to see if there is excess or unnecessary packaging that could hurt the environment. Ensure everything is recyclable.

5) Check the nutritional label and compare. If nutrition is your primary concern, comparing labels will help you select the healthiest brand of sardine.

Recipe: Broiled Sardines With Lemon and Thyme

FOR years, the only kind of sardines available to the average American were packed in oil, water or tomato sauce, sold in little rectangular cans, first with keys and later with pop-tops.

But because they’re plentiful and not endangered as a species (and full of healthful omega-3 fatty acids), fresh sardines are enjoying something of a renaissance. It helps that they’re delicious and inexpensive.

You’re likely to see them on the menus of fancy restaurants, usually as appetizers and usually “grilled.” I use quotation marks because what restaurants advertise as grilled sardines are usually broiled, for two reasons. One is that few restaurants are equipped to do real grilling. The other is that it’s extremely difficult to grill a sardine. Their flesh is so fragile they fall apart. (Wrapping them in grape leaves or paper-thin prosciutto slices is an option, but that process is a pain and decidedly unnecessary.)
